I lectured in the course on Microbiological Aspects of Food Preservation and Quality Assurance, covering the fields of microbial interactions, bio-preservation, and resistance development to food-relevant antimicrobials, including bacteriocins. I have also lectured on microbial ecology and microbial interactions in foods in the course Food and Society under the Open University system. I have been involved in developing practical course activities in DNA microarray analysis and bioinformatics.

Additionally, I have supervised numerous students, including Ph.D., masters, bachelor students, and international students, who have made thesis work in relation to the research projects that I have been employed on. Students who wish to undertake projects related to food safety microbiology can contact professor Susanne Knøchel.
