My name is Anne Gravesen – welcome to my homepage!
This homepage describes the work done in the period of January 1997 to August 2005 during my employment as research associate professor at the Royal Veterinary and Agricultural University in Copenhagen, Denmark.
I have worked on research projects related to microbiological safety of food, in collaboration with professor Susanne Knøchel.
From September 2005, I am employed by Danisco A/S, Brabrand, as Group Manager within Food Protection and Antioxidants.

Research areas
The main aim of my research was to gain an understanding of the mechanisms of adaptation and resistance development of pathogenic bacteria to the adverse conditions that they encounter in food systems. The work focused on Listeria monocytogenes and Campylobacter jejuni, and their response to antimicrobial peptides (e.g. pediocin or nisin), cleaning and disinfection agents (e.g. alcohol), low temperature, or drying. The employed methods include classical microbiological techniques as well as the latest molecular biological techniques, i.e. functional genomics, proteomics and transcriptomics.
Collaboration provides a very creative and productive working environment which I highly appreciate. During my time at KVL I have had formal or informal collaboration with numerous national (Danish Technical University, University of Southern Denmark in Odense, Danish Institute for Food and Veterinary Research, Danish Meat Research Institute, Danish Fisheries Research Institute) and international (GBF, Germany, Universities of Giessen and Leipzig, Germany, University of Poitiers and the Pasteur Institute, France, University of Stellenbosch, South Africa) research institutions within the fields of bacteriocin/peptide mode of action and Listeria and Campylobacter genomics/proteomics. This is now evidenced in joint experiments and publications.
